Dinner Roasted Bison Tenderloin

Cook time: 50 + 20 minutes

Ingredients for 10 servings

Bison or beef tenderloin – 2 to 3 pounds

Sea salt – 1 ½ to 2 tsp.

Cracked black peppercorns – 2 tbsp.

Dijon mustard – ¼ cup

Finely chopped shallots – 2 tbsp.

Garlic – 2 cloves, minced

Fresh rosemary – ½ cup

Extra virgin olive oil – 2 tbsp.

Yogurt cheese – ¼ cup

Method

1. Preheat the oven to 275F.

2. Remove any silvery membranes from the meat. Shape the roast by binding it in several places with kitchen twine.

3. Blend the remaining ingredients together in a bowl.

4. Rub the meat with the seasoning mixture and cover it well.

5. Set the bison in the oven and roast for 50 minutes or until meat reaches 130F for rare and 160F for medium rare.

6. Remove from the oven, cover with a foil and rest for 20 minutes.

7. Slice and serve.
